Truffle Mania



Below are super simple recipes for 3 delicious truffles.

Chocolate Peanut Butter Truffle

Ingredients:
8 oz semi sweet chocolate
1/2 cup creamy peanut butter
1 8 oz tub Cool Whip, thawed
coating (like powdered sugar, crushed peanuts, sprinkles, dipping chocolate, crushed cookies, etc)

Melt the chocolate in a microwave safe bowl for 30 seconds then stir. Repeat until chocolate is all melted and smooth. Add the peanut butter and stir until blended. Let cool for 2-3 minutes then gently fold in the Cool Whip.

Refrigerate for 1 hour. Roll into balls and then roll in one of the coating options. I dipped mine in melted chocolate with a Tbsp of shortening.


Strawberry Shortcake Truffle

Ingredients:
5 oz Pound Cake (1/2 container), crumbled
6 oz cream cheese, room temperature
2 Tbsp strawberry preserves
red food coloring

Mix all ingredients until well blended.

Refrigerate for 2-3 hours. Roll into balls then any coating option.


Mint Chocolate Chip Truffle

Ingredients:
1/3 cup cream
1 1/4 cups white chocolate chips
4 Tbsp butter
1-2 tsp mint extract
3/4 cup mini chocolate chips
green food coloring
pinch of salt

Melt the white chocolate and butter in a large microwave safe bowl for 45 seconds. Add the salt and set aside.

In a small saucepan heat the cream over medium heat just until it starts to simmer. Immediately pour over the white chocolate to finish the melting process. Stir until smooth. Stir in the mint and a couple drops of food coloring. Set aside for 30 minutes.

After the ganache has cooled add the mini chocolate chips.

Refrigerate for 3 hours to set. Roll into balls then into an optional topping.
