
Ingredients:
2 8oz lobster tails
2 sticks of butter
lemon
garlic
In a small saucepan, melt the butter over low heat. Smash a large clove of garlic and place in the melting butter to fuse the flavors.

After the butter is completely melted, add 2 Tbsp of lemon juice. Pour into a measuring cup and allow to cool. Skim the solid fat from the top. The rest of the fat will sink to the bottom.

Pour the clarified butter back into the pan to keep warm, being careful not to pour the fat in.
If your lobster tails were frozen, place in a bowl of cool water for 45 minutes.
Cut the length of the top side of the tail with kitchen shears.

Cut the meat with a knife the length of the tail, but be careful not to cut all the way through.

Place the tail on heavy duty aluminum foil (or double up on regular foil). Spread the shell apart and spoon a good amount of the clarified butter onto the meat.

Seal up the foil tightly and grill over medium high heat for 18 minutes.

Tell me this doesn't look delicious!

All I have to say is this.... How many points is that?
Lobsters are actually very healthy, but ya, the butter isn't. I consider Sundays as my one cheat day.
