
Ingredients:
Tilapia (or other mild white fish, but Tilapia is hard to beat)
Tortilla Chips
1 1/2 Tbsp Taco Seasoning
1/4 tsp Cayenne Pepper
1 Egg
1 Lime
Preheat your oven and a heavy pan or pizza stone to 475 degrees. I prefer working with a pizza stone.
Put 3-4 big handfuls of tortilla chips in a food processor.

Pulse until they're crumb size.

Add 1 1/2 Tbsp of Taco Seasoning and 1/4 tsp of Cayenne Pepper. Taste the crumbs to see if you need to add any salt. Pulse to mix.

Beat 1 egg in a bowl and add the juice of 1 lime to the egg. Dip the fish into the egg mix, then coat well with the crumb mixture. Really pile it on there.

Place the fish on the preheated stone or heavy baking sheet. If it's not preheated, the crust gets soggy on the bottom, so no cheating.

Bake for 20 minutes.
I was unsure how this was going to work out while I was making it. I had been thinking of making a fish with tortilla crust for a while, then decided at the last minute to add taco seasoning and make it spicy. It turned out really good. If I changed one thing it would be to add a little lime zest to the crumbs for some extra citrus flavor.
