Roasted Cauliflower with Cheddar Cheese Sauce



Ingredients:
Cauliflower
olive oil
salt
pepper
garlic powder
parmesan cheese

Ingredients for sauce:
2 Tbsp butter
2 Tbsp flour
1/4 tsp salt
1 cup milk
1 cup cheddar cheese


Preheat oven to 425 degrees.

Break up the cauliflower into bite size pieces. Drizzle 2-4 Tbsp olive oil over the cauliflower. Sprinkle liberally with salt, pepper, garlic powder and parmesan cheese. Mix it all together with your hands until all the pieces are evenly coated.

Cook for 15 minutes, stirring half way through.



For the sauce, melt the butter over low heat. Add the flour and salt. Stir continuously for a few minutes (until the raw flour taste is gone).



Add the milk and stir continuously to prevent lumps.



Add the cheddar cheese and stir frequently until melted.



By now the cauliflower is nice and toasted. They should be soft on the inside and kind of crunchy on the outside.



Place on a nice dish and pour the cheese sauce over the top.
