Chocolate Chip Pumpkin Bread
Ingredients:
2 1/2 cups flour
1 1/2 cups sugar
3/4 tsp baking soda
1 tsp salt
2 1/2 tsp cinnamon
1 1/2 cups chocolate chips
2 cups canned pumpkin (or a 15oz can)
3/4 cup plus 2 Tbsp vegetable oil
3 eggs
Preheat oven to 350 degrees.
Mix all ingredients together by hand.
Pour equal amounts into 2 loaf pans sprayed with nonstick cooking spray.
Bake for 45 minutes or until toothpick comes out clean.
Now here's the most important part: Don't eat it until the next day! It's good the day it's baked, but it is phenomenal the day after. It gets dense and sticky and perfect!!!!
